The Situation

Bruegger's was eager to position itself as offering more than the bagels they were so closely associated with, and evolve into a fast-casual bakery café with a greatly expanded menu.

The Solution

King-Casey's retail design team came up with a new store design that evokes the charm and warm hospitality of a "rustic, New England kitchen". The new store concept includes soft lighting, warm colors, hardwood floors, natural wood, open hearth, and inviting seating areas. King-Casey also developed an enhanced floor plan for Bruegger's that improves customer thru put and increases back-of-the-house productivity.

The Results

Same store sales at units implementing the new design have shown immediate increases as high as 30% and have sustained sales increases in the teens. In addition, the average check size has increased, traffic is up, and the customers are gobbling up the new store concept.
